Mashing and wort boiling: breaking the paradigm

Bri, in conjunction with Pursuit Dynamics, have begun evaluating a novel processing technology incorporating rapid heating, mixing and pumping offering potential savings in plant costs, space, energy, wastage and production time without sacrificing quality. The equipment, PDX, uses steam and supersonic shockwaves to achieve impressive performance without moving parts and with no emissions and low operating costs. Bri have been evaluating the technique for mashing, wort boiling and commercial scale CIP liquor heating. Results of this work are presented. Other potential applications and benefits are discussed.
