Chamomile is a well-known medicinal plant species from the Asteraceae family. Nowadays, chamomile is a highly favored and much-used medicinal plant in folk and traditional medicine throughout the world and can therefore be considered as an important medicinal species. It is an annual herb, growing up to 20-60 cm tall with branching stems. The leaves of this herb are very fine and linear. It has a typical compositae flower, with white rays and a yellow conical center that is hollow.4 Although there are numerous varieties of chamomile, the two most popular are Roman chamomile (Chamaemelum nobile) and German chamomile (Matricaria chamomilla L. or Chamomilla recutita), both belonging to the Compositae family. Matricaria chamomilla is the only variety of this family that thrives in Greece.
