Hydroperoxides that are formed as primary products during the autoxidation process of oils and fats are analytical markers for lipid deterioration. ~1H-NMR spectroscopy enables to detect and quantify all hydroperoxide species in oils and fats simultaneously. Generally, the level of primary oxidation products is indicated by the peroxide value (PV) according to Wheeler. A comparison between the analytical performance of the Wheeler method and the NMR approach seems to be intractable. The results obtained by the Wheeler method are affected by an inherent systematic error which is ignored per definition. Additionally, the precision of the PV is expressed in meq/kg and the precision of the hydroperoxide amount by NMR spectroscopy can be given in mmol/kg, which makes a comparison rather difficult. In this contribution, a statistical procedure is presented that copes with this difficulties.
