Production and Characterization of Fungal Chitosanase

Chitosanases catalyze the hydrolytic degradation of chitosaa They are important for the extensive carbon and nitrogen recycle which occurs in nature and the industrial application which are sea-food-processing and size-specific chitosan oligomer production required particularly in pharmaceutical industries. So far, a number of fungal chitosanases have been purified, characterized and sequenced since 1981. In this paper, the researches of fungal chitosanases are discussed from three aspects : 1. Endo-type chitosanase purification and characterization (Asper gillus fumigatus KH-94, Fusarium solani, Mucor rouxii A · B, Penicillum islandicum, P. spinulosum, Rhodotorula gracilis , Trichoderma reesei, A. oryzae, A. fumigatus Y2K and A. fumigatus S-26). 2. Exo-type fungal chitosanase purification and characterization (T. reesei, A. oryzae, A. fumigatus and Cordyceps sp. MET 1504). 3. Chitosanase molecular sequence data (T. reesei, Metarhizium anisopliae, A. oryzae and A. fumigatus S-26). For our present purpose, the studies of fungal chitosanases having very diverse characters are discussed and are compared with our lab chitosanases research results.
