摘要

This paper was first conducted to analyze the fragrance compounds of Moutai liquor by GC -MS, the GC profile isolated and showed 99 peaks, in which 75 compounds were determined, there concentration was up to 96.58% of total compounds. Second part was dissected effect of these typical compounds in liquor, including organic acids, esters, hydroxyl compounds, aldehydes,etc. , during solid state fermentation or saving process. Third part was introduced relationship between typical compounds of Moutai liquor and its technology characters.
