Communication among members Of the pork chain (Figure 1) has explicitly indicated that quality must be enhanced to strengthen the position of pork in the eyes of the consumer. Increased access to export markets, particularly the Far East, has magnified the pork quality awareness level of the packing, processing and distribution links of the Pork Chain. The objective of this paper is to discuss the quality critical control points at the production and production input levels of the Pork Chain.
