Hop extract is one of the important additives in beer production. It's the component part of bitter in beer. After the α-acids are isomerized and hydrogenized, the hydro iso-α-acids will be obtained.Hydro iso-α-acids are called hydrohumulon.After hydrogenation.not only the value of bitter but also the stability in light will be greatly increased.At the same time, the utilization ratio of α-acids is greatly increased.However,the composition of hop extract is very complex.There are mainly about 30~40 percent of α-acids ,43~53 percent of p-acids,10 percent of resin and tannin,1~5 percent of hop-seed oil in it.So the isomerization and separation are necessary before the hydrogenation.According to the different solubility of iso-a-acids in different pH, we can obtain the pure iso-a-acids by separation.
