Recently we demonstrated that the non-pathogenic Escherichia coli strain MG1655 can develop high levels of barotolerance by spontaneous mutations~1. We anticipated that this phenomenon could form a serious threat for high-pressure processing of foods, assuming that pathogens and/or spoilage organisms different from MG1655 can also acquire resistance.
