Major problems connected with food product heat processing process - need of reduction of energy costs and increase of the final product quality, have been considered. Heat treatment in infra-red (IR) installations provides for considerable energy resource saving, though streaming irregularity of IR-radiation in the working chamber reduces the quality of product. Thus designing of thermal installations for food industry should be accompanied by its heat calculation. A geometrical approach is proposed for the solution of direct and inverse problems. The geometric simulation concept assumes that each heat ray is the carrier of part of energy. The developed geometrical model allows control over heat exchange process by means of radiation in gas environment of energy absorption and radiation. Regulation function ensuring predetermined law of reflected ray distribution on the heat receiving product is introduced to control the reflected ray passing. Prospect of future studies is in the solution of a number of tasks of geometric simulation including simulation of dynamic reflected systems.
