[Problem] To provide a novel technique for peeling a citrus fruit. [Solution] The present invention comprises: a pretreatment step for partly removing and/or making a cut to the peel of a citrus fruit; an enzyme solution impregnation step for immersing, in a depressurized space, the pretreated citrus fruit in an enzyme solution that can decompose the peel and that is adjusted to normal temperature or to a temperature of 10-40°C; a peel decomposition removal step for decomposing and removing the peel from the citrus fruit that is impregnated with the enzyme solution; and a finishing process step for washing with water the citrus fruit, the peel of which is decomposed and removed.
