The invention relates to a method (S0-S6, S13) which is used to determine a target processing state of at least one cooking product (B) to be treated by means of a cooking device (1). According to the method, a user is provided a set of images of the cooking product (B) in different processing states for selection, respective measurement signatures are stored for each image, and if a user selects one of the images, the cooking device (1) assumes (S4) the measurement signature corresponding to the selected image as the target measurement signature. Another method (S0-S22) is used to operate a cooking device (1), wherein a cooking process is carried out until a target processing state assumed by means of the method for determining the target processing state is reached (S7, S8, S10). The cooking device (1) has a cooking chamber (4), at least one sensor (4) connected to the cooking chamber (4), and a data processing device (7), and the cooking device is designed to carry out the method (S0-S22). The invention can be advantageously used in particular on baking ovens with at least one cooking chamber camera, in particular in order to determine or select the degree of browning of the cooking product.
