Food preparations; condiments. - Sea fish, such as dog-fish, rays, and sea-salmon, are cooked in water containing acetic acid for hardening the flesh, and a flavouring-solution for removing the fishy taste, and are skinned, filleted, dried, mixed with baked bread crumbs and with cooked pulverized potatoes, seasoned with onion, salt, &c., made into rissoles, and baked. The flavouring-solution preferably consists of cinnamon, ginger, cardamom, bay leaves, cloves, oranges, and onions soaked in wine vinegar, and expressed.
