A process for drying minute, discrete capsules having walls of hydrophilic polymeric materials, which walls are in a swollen state due to adsorbed water, comprises the steps of dispersing the capsules into an agitated liquid, anhydrous, hygroscopic polyhydroxy material; maintaining the agitation until substantially all of the water has been extracted from the capsule walls; and separating the water-containing polyhydroxy material from the capsules. The polyhydroxy material may be selected from 1,2- propanediol; 1,2,3-propanetriol; 1,2,3,4,5,6- hexanehexol, or mixtures thereof.
