In apparatus for sorting fertilized and unfertilized hens' eggs, making use of electric potentials developed in fertilized eggs, the eggs are inserted at 12 between pairs of electrodes 1, 2 carried on an endless conveyer belt 4 and respective capacitors 7 are charged to the voltages picked up by the electrodes. A switch 6 is opened as each egg reaches the end of the upper flight and remains open while the egg is carried, now turned through 180 degrees, along the lower flight of the conveyer to a measuring device 10 where the switch 6 is again closed and the difference between the voltage on the capacitor 7 and the voltage picked up by the electrodes 1, 2 is measured and used to control a sorting device 11. Thus, the effect of the contact potential is eliminated because this remains unchanged while the embryo potential is reversed by turning the egg over. Hence a fertile egg gives a high output at the device 10 while an unfertile egg gives a low output. The electrodes may be non-polarizable Ag-Ag Cl electrodes mounted on U-shaped insulating supports.
