Bacillus P 300, belonging to the species, B. licheniformis, is cultivated in a nutrient medium contg. C- and N-sources and the proteolytic enzyme formed is isolated. The pref. pH-value is 6.5-8.0 and fermentation takes place at pref. 35-40 degrees C for 20-72 hrs. The protease is isolated by filtration of the medium, followed by extraction with organic solvents or by salting out. The protease has high enzymatic activity and a broad stability spectrum, esp. to chelating agents. It may be used in industrial cleaning such as in breweries, dairies and other foodstuff industries.
