Precooking plant for food prods., partic. quenelles, immerses the prods. in a water bath at 80-90 degrees C; at first they fall to the bottom but as cooking proceeds they rise to the surface again. Means are provided for holding them back until they are precooked throughout. The quality of the cooking is very good because the quenelles are precooked whilst completely immersed; they become puffed up on the second cook,ing and are very light to the taste.
