An olive oil extraction plant comprises a machine to wash the olives, an extractor unit which crushes the olives and separates skin and stones from juice, a juice clarifier and a final centrifuge. The extractor unit comprises a horizontal rotary drum, internally partitioned by a diametrall wall. The wall is set between a first operation lacerating zone and a second operation sepg. zone in which juice is strained from solids. The lacerating zone has free-rolling masses, e.g. spherical balls of stainless steel, to cut up the olives by tumbling action. Appts. produces an oil of characteristics unmodified from those of oil in the original fruit. A high yield of clear oil is obtd. without conventional grinding or pressing operations.
