A distillation plant, suitable for the desalination of sea water, is made up of a plurality of sections 12 each comprising a series of flash evaporator stages 26 separated by partitions 28 traversed by condenser tubes 46; the side walls of each section have openings and flanges 56, 62 which are welded to the corresponding flanges of the adjacent section(s) so that the vapour-space of the each stage of each section is in communication with the vapour-space of the corresponding stage of the adjacent section(s). Partitions 28 extend through these openings and terminate in edges coplanar with the outer edges of flanges 56. Sea water is passed through the tubes 46 of each section and, after further heating, is introduced into the first flash stage of the section. The sea water rises between walls 30 and a portion flashes into steam. A mixture of steam and sea water particles strikes baffles 36, 38. The separated sea water flows down sloping walls 34 and through orifices, in partition 28, into the following flash stage, where a lower pressure is maintained than in the preceding stage so that further flashing occurs. The steam separated in the first stage flows through demisters 48 and condenses on tubes 46. The condensate (desalinated water) collects in tray 40 and then flows through a liquidseal into the portion of tray 40 in the following stage.
