Treating poultry carcasses - using positively charged water sprays which are attracted to negatively charged carcasses

During the continuous processing of food products the products are wetted and subjected to a thermal exchange. The process is carried out in an electrostatic field. One pole of an electrostatic generator is connected to a spray-producing device and to an electrically conductive material either adjacent the spray or between the spray and the food products. The other pole of the generator is connected either directly or indirectly to the food products. Pref. the process is used in a poultry processing station where the poultry is either scalded or chilled as it is carried suspended along a processing tunnel. The heat transfer between the water and poultry is improved by the electrostatic polarisation. There is improved saturation of the poultry with reduced water consumption.
