A process for the continuous extraction of comminuted sugar beet, the cossettes being pressed and the expressed juice obtained being collected and a juice being obtained from the pulp by diffusion to exhaustion in a continuous plant in which the pressed pulp is conducted in countercurrent to the hot water. The process provides a phase in which the soaking water is separated off from the exhausted pulp, the water separated off being returned to the said extraction phase.
