A cooked pudding contg. highly dutched cocoa is prepd. by mixing an ungelatinized starch, a sweetener, a milk component, dutched cocoa having a pH above 7.0, and sufficient acidulant to reduce the pH to 6.3 - 6.7; then cooking the hydrated mixt. and coolings it. Addn. of the acidulant allow highly dutched cocoa to be used, while giving a prod. having a firm texture and sharp pie cut.
