PURPOSE:To prepare an instant product of dried fish meat paste to be restored to an edible state only by immersing it in hot water for a short time, by denaturing fish meat or ground fish meat containing no salt under heating, using it as part of raw material. CONSTITUTION:Fish meat or ground fish meat in a state free from eluation of salt-soluble protein in the fish meat without adding salt to it is denatured under heating to give fish meat denatured under heating. This fish meat is kneaded with ground fish meat containing salt in a ratio of (50:50)-(90:10), and ground. The prepared blend is conventionally molded, heat-treated, processed into a product of fish meat paste, and dried.
