Producing cheese by pumping prepared curds - to continuous whey draining and cheese forming unit via line with air bubble injection to promote eye formation
The method is intended for producing cheese whereby the prepared curds are pumped to a whey draining and cheese moulding unit. A gas, preferably air, is injected in the line between the pump and the unit, preferably at a rate of 0.5-5 litres/h or rather 1-2 litres/h. The air is preferably injected using a peristaltic pump connected to a stainless steel tube which extends into the line and is provided with a 30-60 deg., preferably 45 deg. bend at its end in the direction of flow leading to a 0.05-0.5 mm, preferably 0.1-0.3 mm diameter outlet orifice.
