Apparatus for measuring physical, in particular rheological, properties of a medium 3, of the type comprising: - a measurement member 6 immersed in the liquid medium, - an electronic processing unit for the signal emitted by this measurement member 6, - connection cables connecting the member and the electronic processing assembly, characterised: - in that the measurement member 6 has a narrow slot 30 forming an air gap for two piezoelectric biplates 37, 38, disposed opposite each other in cavities 35, 36 made in the opposing walls 31, 32 delimiting this air gap 30; - in that the first biplate 37, forming an emitter, is connected to means intended to excite it in order to make it vibrate in flection; - in that the second biplate 38, disposed opposite, forming a receiver, is connected to means capable of detecting the response of the medium to the vibration of the first biplate 37 in order to transmit this data to the electronic processing assembly.
