A process for the continuous production of starch hydrolysis products which form thermoreversible gels on heating in water is described. For this purpose, starch is suspended in water and, after addition of alpha- amylase, continuously pumped into a tank which is preferably heated directly with steam and which is equipped with an agitator. Water is introduced into the tank before starting up. The tank is heated to and maintained at a temperature which is above the gelatinization temperature of starch, preferably between 90 and 100degreeC. Simultaneously with the feeding in of the starch suspension, the same volume of liquid is continuously drawn off at the bottom of the tank, the flow rate through the reaction tank being chosen so that the resulting residence times average from 5 to 60 min, preferably from 10 to 30 min. The resulting starch hydrolysate solution is subsequently, after enzyme inactivation, purified and dried.
