The invention relates to an antioxidant and stabilising agent for liquid foods, consisting of a mixture of 30-40% of anhydrous nitric acid, 20-34% of potassium pyrosulphite, 3-6% of meta-tartaric acid and 10-20% of ascorbic acid. The product is prepared and preserved under an antioxidant atmosphere at a relative humidity of less than 60%.
