Foods, esp. farinaceous prods., are coloured black by addn. of powdered green nutshells and freeze-dried spinach to the dough mixt. in the initial stage of shaping of the dough. The prod. leaving the shaping machine is led into a vessel filled with satd. steam, to cause the black colouration by reaction of the given components. The method can be applied to any foods, esp. stuffed doughs; the stuffing may contain natural truffle essence. A stuffed or unstuffed food, with black colour and of varying shape is claimed. The food include tortellini and ravioli.
