Process for removing solvent-like metabolites and aroma components from a fermentation process, in which the solution is drawn off from the fermenter, and the retentate is returned to the fermenter, for which purpose a solvent sensor is provided and measures the concentration in the fermenter, the signal is passed via a measuring transducer to a microprocessor which controls an electrodialysis unit to remove the acid and a pervaporation unit downstream of the electrodialysis.
