PURPOSE:To directly produce the subject oligo saccharide useful as a healthy food without clogging a jar fermenter. etc., and without extracting polysaccharides by decomposing a sea alga belonging to the genus Porphyra of the class Rhodophyceae with a polysacchalase produced from a microorganism belonging to the genus Vibrio. CONSTITUTION:A microorganism [e.g. Vibrio.SP No.6380 (FERN 11948)] belonging to the genus Vibrio and having an ability to produce a polysacchalase is cultured in a medium containing agar as a carbon source, and the polysacchalase as the product is collected from the cultured product. The produced polysacchalase is added into an Eppendorf tube previously having a therein a sea alga [e.g. SUSABINORI (a sea alga)] belonging to the genus Porphyra of the class Rhodophyceae and a 0.05M sodium phosphate buffer solution (pH of 7.0), reacted with the sea alga at 30 deg.C for 30min, heated at 10min in a boiling bath to stop the fermentation reaction, and subsequently rapidly cooled. The reaction product is centrifuged. The supernatant is separated and concentrated by an ultrafiltration process to provide the oligo saccharide of the sea alga belonging to the genus Porphyra of the class Phodophyceae.
