Process for the extraction of proteins not bound to chloroplast pigments or white proteins from plant cells comprising a step of heating by injection of steam until a temperature value, fixed as maximum value, is obtained. The heating temperature is controlled by adjusting the pressure used during this step. This step may be followed by the establishment of a sharp depression in the cooking chamber which has the effect of improving the protein extraction yield. The plant material thus treated is pressed in order to extract the white proteins therefrom. This process has the advantage of avoiding an overheating of the plant material resulting in the coagulation, in the plant tissues, of the white proteins. IMAGE
