The invention relates to a process for converting a residue containing a lactate, for example ammonium, sodium or potassium lactate, arising from the manufacture of lactic ferments to a lactic acid concentrate, characterised in that it consists (a) in replacing the cations combined with the lactate present in the said residue with H+ ions and (b) in concentrating the residue obtained in (a) to a lactic acid concentration of at least 5% by weight. The concentrate obtained is useful in the food industry for producing a lowering in pH and/or for activating micro-organisms.
