LOW CALORIE FAT SUBSTITUTE COMPOSITIONSRESISTANT TO LAXATIVE SIDE EFFECTAbstract of the DisclosureThe present invention relates to low calorie fatsubstitute compositions that are useful as fat replacements inlow calorie foods, and as pharmaceutical compositions.Sucrose fatty acid esters are preferred low calorie fatsubstitutes. The compositions are highly resistant to anundesirable laxative side effect. These benefits are achievedby formulating compositions comprising a liquid polyol fattyacid polyester, at least about 10% solid low calorie fatsubstitute by weight of the liquid polyester, and at leastabout 1% of a cohesive network of polysaccharide fibrils andmicrofibrils, for example microfibrillated cellulose, byweight of the liquid polyester.
