Low calorie fats and sugar esters are synthetic fats often known as fat substitutes intended to replace conventional fats and oils in food formulations and preparations. They are made by esterification of the glycerol or sugar moiety with fatty acids. Depending on the degree of esterification, they may serve as a low, reduced or zero calorie fat substitutes. Whether they contribute calorie or not depends on their susceptibility to hydrolysis by the lipolytic enzymes. These fats can replace most of the physical, functional and organoleptic properties of conventional fats and oils in foods. Olestra, a sucrose fatty acid polyester, is the only synthetic zero calorie fat substitute approved for use in savory snacks in the United States of America to data. Several other molecules with similar properties are under development or developed but not yet approved for food use.
