Process for the production of an organic extinguishing powder, comprising: - providing a number of cucurbitaceae of various types and sizes, - subjecting these to thorough drying, substantially to a process of freeze drying, a mixture comprising at least two types of the said cucurbitaceae, then - subjecting the said mixture to a process of thorough comminution and screening so as to obtain a homogeneous product in the form of a fine powder, and then - mixing the said powder with at least one basic additive, substantially calcium carbonate, in percentages by weight between 1.5% and 7% and with at least one salt preservative of the food type, substantially salicylic acid, in a variable percentage between 0.1% and 2%.
