PURPOSE: To provide a food composition which can reduce the bitter taste which amino acids or peptides intrinsically possess and permits to easily intake them without hesitation and can reduce the bitter taste of a variety of foods or food products causing no change of their flavors and tastes, when it is added, a method of reducing the bitter taste and a nutrient-enriched food product containing the same (food composition). CONSTITUTION: This food composition comprises a bitter-tasting substance selected from bitter amino acids and bitter peptides and a phospholipid selected from acidic phospholipids and their lyso form. The method of reducing the bitter taste of food products where an acidic phospholipid or its lyso form is added to a food product containing a bitter-tasting substance selected from among bitter-tasting amino acids and bitter-tasting peptides in an amount of 0.01-50 fold the weight of the amino acid or peptide is provided. The nutrient- enriched food product containing this food composition is also provided.
