Process for the preparation of fresh pasta of the spaghetti type and the like by extrusion and immediate cooking in hot water under pressure at a temperature in excess of 100 degree C. Equipment which is suitable for performing the double operation essentially comprises an extruder cylinder combined with a cooking vessel which communicate through the extrusion head. Pasta cooking times of only 2/3 minutes are achieved. Especially for use in fast food outlets and for automatic dispensers. IMAGE
