FIELD: butter and fat industry. SUBSTANCE: invention refers to methods of technochemical inspection of production in butter and fat industry and to examinations of quality of manufactured products namely to processes of quantitative determination of fraction of total mass of aggregate fat in fatty acids in soapstock produced during alkaline refining of butters and fats. Acid decomposition of soapstock sample is performed with sulfuric acid which is then separated into fat and aqueous phases, fat phase is extracted with ethyl ether, ethyl alcohol is injected, free fatty acids are tittered by 0.5 N alkaline solution. For acid decomposition of sample sulfuric acid with 72-75% concentration is used in mixture with 1.0 ml of isoamyl alcohol. Phase separation is conducted in field of centrifugal forces with separation factor 210-850 for the course of 5 min. Ethyl alcohol is taken in the amount of 40 ml of fat phase.
