The present invention relates to a process for the purification of surfactants of the amphoteric or betaine type according to which an aqueous solution of said surfactant is subjected to electrodialysis, characterized in that said solution contains from 0.1 to 10%, preferably from 0.5 to 5% by weight of an alcohol, more particularly a polyol relative to the weight of the surfactant. Use of the purified surfactants, especially in detergent or cosmetic compositions.
