PROBLEM TO BE SOLVED: To inexpensively produce amylase inhibitor (AI) derived from wheat gluten having high titer without requiring excess facility. ;SOLUTION: Wheat gluten is hydrolyzed and an alkali agent is added thereto to control pH to 8-11 and solubilize wheat gluten and salts are added thereto to make the gluten insoluble and gluten is separated from Al containing liquid. The pH of the resultant Al-containing liquid is controlled to neutral or acidic and as necessary, unnecessary protein is removed by gelling by heat treatment and Al mixture is recovered as a precipitate or insoluble matter. The recovered Al mixture is directly used or treated with a proteinase by adding a water- containing alcohol to control the alcohol concentration to 5-80% and dried.;COPYRIGHT: (C)1997,JPO
