PURPOSE: To produce a cyclodextrin glycosyltransferase (CGTase) capable of producing γ-cyclodextrin in an increased amount when converting starch or a starch-like substrate into the cyclodextrin. ;CONSTITUTION: The protein sequence of this CGTase has an amino acid sequence Asn Leu Tyr Asp in a region between amino acid position 180 and amino acid position 240. In this case, position 1 of the protein sequence is the beginning of the signal peptide of the CGTase and Xxx denotes a natural amino acid other than Tyr.;COPYRIGHT: (C)1995,JPO
