MANUFACTURE OF COLORED RICE-CAKE-LIKE PRODUCT CONSISTING OF NONGLUTINOUS OR GLUTINOUS RICE INCLUDING PURPLE RICE

PROBLEM TO BE SOLVED: To color a rice-cake-like object whose main component is nonglutinous or glutinous rice by effectively utilizing the coloring matter of purple rice. ;SOLUTION: In this manufacture of the colored rice-cake-like products consisting of the nonglutinous or glutionous rice including the purple rice, the nonglutinous or glutinous rice and the purple rice are mixed and cooked or the nonglutinous or glutinous rice is washed with still water, first washing water and second washing water are respectively used as the washing water of the purple rice and the first and second washing water is filtered and preserved. Then, the nonglutinous or glutinous rice mixed with the appropriate amount of the purple rice is immersed in the second washing water for one hour and then drained, the water is preserved as well and the first washing water and second washing water of the purple rice are mixed, heated and boiled. The previously drained rice is put in the boiled washing water, all hot water presenting a purple color is absorbed by the rice while performing stirring and the colored rice is steamed in a steamer for twenty minutes. It is kneaded and made glutinous in the next stage, turned to an appropriate size and pierced to a skewer.;COPYRIGHT: (C)1998,JPO
