PROBLEM TO BE SOLVED: To practically use a broth of Grifola frondosa S.F. Gray and enable the obtaining of the subject powder without losing the aroma and flavor of Grifola frondosa S.F. Gray by concentrating a broth formed as a by-product in a production process for the Grifola frondosa S.F. Gray boiled in water under a reduced pressure until the Brix(soluble solid content) attains a specific range and then spray-drying the prepared concentrate. SOLUTION: A broth produced in a production process for Grifola frondosa S.F. boiled in water Gray is concentrated under a reduced pressure until the Brix thereof attains 1-50%, preferably 5-20% and the resultant concentrate is then spray-dried. When boiling the Grifola frondosa S.F. Gray in water, the Grofola frondosa S.F. Gray is preferably dipped in a hot water tank or a hot water vessel for boiling well and then well boiled at 80-95 deg.C for 15-20 min. The concentration is preferably conducted at 75-85 deg.C under 32-42 kPa. The spray-drying is preferably carried out at 125-135 deg.C hot air temperature and 75-85 deg.C discharge gas temperature. When a powder with slight hygroscopicity is desired, dextrin or cyclodextrin is preferably added to carry out the spray- drying.
