PROBLEM TO BE SOLVED: To produce new wheat noodles as a healthy food capable of preventing cancers, delaying the progress of the cancers and bringing about effects even on beauty culture and having a high nutritive value. SOLUTION: Three kinds of raw vegetables of a carrot, a pumpkin and a green pepper abundantly containing carotenes or vitamins in respective amounts of 10-14 g based on 100 g of wheat flour are shredded and an alkaline saline solution is subsequently added thereto to provide a loose pasty vegetable juice, which is then sufficiently kneaded with the wheat flour. The resultant kneaded material is then repetitively well spread into a noodle beltlike form with a roll. The prepared spread material is subsequently cut into a noodle striplike state and lightly dried with a dryer to produce semiraw wheat noodles.
