PROBLEM TO BE SOLVED: To provide a method for producing an excellent jelly by combining two or more kinds of gelling agents different in dissolution temperature and carrying out the gelation without deteriorating the mutual characteristics, to produce the jelly and obtain a jelly material using the jelly. ;SOLUTION: This method for producing a jelly is to mix two or more kinds of gelling agents different in dissolution temperature and comprises a step for heating the gelling agent A having the highest dissolution temperature together with at least water to the dissolution temperature or above and dissolving the gelling agent A, a step for cooling the solution of the gelling agent A to a temperature region not lower than the dissolution temperature of the gelling agent B having the second highest dissolution temperature, a step for heating the gelling agent B together with at least water to the dissolution temperature thereof or above and dissolving the gelling agent B and a step for adding the solution of the gelling agent B to the solution of the gelling agent A cooled to the prescribed temperature region and uniformly mixing both the solutions. When the gelling agents are further used thereafter, the gelling agent solutions are added stepwise in the same procedures in the order of decreasing dissolution temperature and all the gelling agents used are added.
