A process for preparing a fruit- or vegetable-based product comprising: adding pectin and pectinmethylesterase to a fruit or vegetable paste which is not sensitive to pectinmethylesterase; incubating the paste with the pectin and pectinmethylesterase; and optionally inactivating the pectinmethylesterase.
