PROBLEM TO BE SOLVED: To provide a method for improving the quality of Shouchu (Japanese white distilled liquor), particularly make the flavor and taste of Shouchuu fine and mellow. SOLUTION: Shouchuu is treated with the charcoal carbonized at 1,100-1,300 deg.C, preferably at 1,200-1,300= to make the taste and flavor of the shouchuu smooth and mellow.
