METHOD FOR PRODUCING SOYBEAN EXTRACT-CONTAINING SHOCHU (JAPANESE WHITE DISTILLED LIQUOR)

PPROBLEM TO BE SOLVED: To provide a method for producing soybean extract-containing Shochu, including subjecting a main raw material composed of soybeans and a main raw material comprising grains to fermentation reactions to produce a soybean extract component and a Shochu alcohol component separately, and then distilling their mixture to obtain the soybean extract-containing Shochu. PSOLUTION: The method for producing the soybean extract-containing Shochu includes: a first process for adding a seed malt to a salt raw material of grains to produce the malt and then adding the malt, yeast and water to a main material composed of grains to ferment the mixture, thus obtaining unrefined Shochu; and a second process for adding a seed malt to a salt raw material of soybeans to produce the malt and then adding the malt, yeast and water to ferment the mixture, thus obtaining unrefined soybean Shochu; and successively mixing the unrefined Shochu in the first process with the unrefined Shochu in the second process, and then distilling the mixture to obtain the soybean extract-containing Shochu.
