PROBLEM TO BE SOLVED: To provide a method for producing a dry pasta, by which the non- sticky, non-eluting dry pasta having an excellent texture and excellent processing durability can be obtained.;SOLUTION: This method for improving the quality of the dry pasta, characterized by holding the dry pasta in a 50 to 95°C atmosphere. When the holding is especially carried out under conditions on the inside (containing the lines and the curved lines) of the figure shown in Figure 1, the quality-improving effect is remarkable.;COPYRIGHT: (C)2001,JPO
