Method for measuring protein in milk using iodine

A method for measuring the concentration of protein in milk comprising: (i) providing an electrochemical cell comprising a conducting electrode, a reference electrode and a solution comprising the redox couple iodine/iodide; (ii) measuring the potential between said electrodes; (iii) adding a sample of said milk to said solution; (iv) remeasuring the potential between said electrodes and calculating the change in potential; and (v) calculating the concentration of protein as a function of the change in potential.
