In the present invention, efficient and industrial processes for production of aspartyl dipeptide ester derivative represented by the general formula (3) expected to serve as a sweetener, and aldehydes represented by the general formulae (1) and (2) which are intermediates therefor are provided. Among them, a process for producing industrially and efficiently N-ÄN-Ä3-(3-hydroxy-4-methoxyphenyl) propylÜ-L- alpha -aspartylÜ-L-phenylalanine 1-methyl ester particularly excellent as a sweetener having a high sweetening potency, a development of intermediate for the production particularly useful and advantageous therefor, and an efficient process for production thereof are provided.
